Simple
Simple refers to the natural winemaking process that's used to make wines full of flavour. Quality grapes are pressed, then left to naturally ferment in concrete tanks. The wine finishes fermenting in the bottle to create its sparkle naturally. There is no fining or filtration, leaving plenty of character. The result is a light yet fragrant fizz that's especially good with ceviche or shellfish.

Nakkal
Nakkal is the Canelones project of friends and winemakers Santiago Degásperi and Nicolás Monforte. Their aim is fresh, accessible wine made with minimum intervention and close attention to fruit and place. Fermentations begin with yeasts from the vineyard, while the wines are clarified naturally (two rackings timed to the moon calendar). The vineyards are farmed sustainably, although without certification.
