It blends the Mediterranean grapes of Viognier and Marsanne, with the local grape Criolla Blanca. The majority of the grapes are fermented in open top concrete eggs, whilst 10% of the wine is aged separately in French barrels under a layer of Flor (yeast) - the same way Fino Sherry is made.\u003c\/p\u003e\n\u003cp\u003eThe result is an incredible wine packed full of interesting, complex flavours.
