This wonderful Champagne-style sparkling wine from Slovenia has got everything going for it - freshness, rich flavours, a creamy texture, and tons of complexity.

The style is classical, with several years bottle ageing developing flavours of biscuit and brioche. The traditional blend of Chardonnay and Pinot Noir varieties combine fruity flavours of lemon and apple with a firm texture in the final wine.

Inspired by his apprenticeship in Champagne, Janez Istenič discovered the same high acidity could be replicated. The winery prioritises free run juice and a long slow bottle aging to achieve its high quality sparkling wines.

Bizeljsko-Sremič

Bizeljsko Sremič is a sub-region within the wider Posavje wine district in Eastern Slovenia. It's well known locally for producing top quality white and now sparkling wines. The region benefits from warm summers to successfully ripen the grapes, and rolling hills of up to 400m that help retain freshness in the wines. As well as some international varieties, there are local specialities, such as Rumeni Plavec, that are well worth seeking out.
