You'll also get some juicy blackberry, raspberry, and liquorice. What makes it so flavoursome? The grapes are grown high at 700m, and cool nights give more time to develop those intense flavour compounds. Then, at the winery, the grapes are ‘cold soaked’ before fermentation, which releases all those rich notes. And the taste is immense.\u003c\/p\u003e\n\u003cp\u003eCarmenere is a bit like a cross between two of the Bordeaux classics. Soft and silky like a Merlot, with intense dark fruits of a Cab Sav. When done right, it can stand on its own, and this one absolutely does. Bastion de Camerac let the grapes shine in their native soil, and the result is a wine packed with intense black fruits, liquorice and spice, with a little leather developing in the bottle.
